Tomato and Sugarsnap Pea Salad

8 oz. fresh sugar snap peas or green beans, trimmed
2 medium tomatoes cut into ½ inch wedges
¼ cup thinly sliced red
¼ cup light balsamic salad dressing
2 tablespoons chopped fresh basil or parsley
¼ teaspoon salt
½ cup (2ounces) crumbled reduced fat feta cheese

1. Steam peas 3 minutes or until crisp and tender. Drain and rinse with cold water till cool. Drain and shake off access water.

2. Combine peas, tomatoes, onion, salad dressing, basil and salt, toss until blended. Sprinkle with feta.

Makes 8 serving.
